Processing methods of Surimi Fish Fillet Snack
Raw Material Processing
The raw fish must be pre-processed by cleaning, descaling, and eviscerating. The water temperature during cleaning is kept below 10°C to prevent protein denaturation. A meat extractor is then used to separate the fish meat from bones to ensure cleanliness.
Pounding and Smashing
After adding 2%-3% salt, the fish is pounded to release myofibrillar proteins and form an actomyosin gel. The temperature during this process must be controlled at 30-40°C to promote gelation, while avoiding temperatures above 60°C, which can degrade the gel.
Molding and Heating
The minced fish is formed into shapes such as fillets or meatballs using a forming machine. It is then rapidly heated to above 50°C in a constant-temperature gelling machine to form an elastic gel. For example, fish balls are steamed at 70-80°C for 30 minutes to ensure complete solidification.
Post-Processing
After cooling, the fish is vacuum-packed or sealed in an automatic packaging machine to extend shelf life. Some products require frying or baking to enhance the texture, such as fish cakes, which are treated with a deep-frying or baking process.
