Processing technology of Surimi Fish Tofu Snack
Ingredients
Frozen fish paste (surimi), soy protein, tapioca starch, vegetable oil, spices, etc. The base consists of 50% fish paste, 16% soy protein, 6% tapioca starch, 5% vegetable oil, and ice water.
Processing
Thaw the fish paste → Add ingredients → Chop → Shape → Steam → Deep-fry → Braising → Vacuum Packing → High-temperature Sterilization.
Chopping Process
First, add the fish paste to the blender and chop at low speed. Then, add the remaining ingredients (1.5% salt, 0.3% MSG, 4% ginger juice, 3% egg white, 0.3% complex phosphate, 0.3% baking soda, 0.4% transglutaminase, and 0.8% calcium chloride). Turn the chopper to high speed and continue chopping until all the ice has melted and the base temperature remains below 12°C.
Braising Recipe
Based on 1 part broth, the spices are as follows: chili pepper 3.0%, Sichuan peppercorns 1.0%, cinnamon bark 1.0‰, star anise 2.3‰, ginger 1.0‰, dried tangerine peel 1.0‰, licorice root 1.6‰, allspice 1.6‰, fennel 2.6‰, angelica dahurica 1.3‰, tsaoko 1.3‰, bay leaf 1.0‰, galangal 2.0‰, nutmeg 1.2‰, cardamom 1.2‰, cloves 0.6‰, hawthorn 0.5‰, and lemon 0.3‰. Other ingredients are as follows: cooking oil 15%, salt 2.5%, sugar 8.0%, dark soy sauce 3.0%, fermented black bean paste 4.0%, and MSG 3.0%.
Pasteurization
Sterilize at 115°C for 15 minutes.
